Nutty Caramel Scooters by Perry Lewis, Jacksonville Beach, FL

  • 10 cups of honey nut scooters
  • 1 can mixed nuts
  • 1 cup packed brown sugar
  • ½ stick butter
  • ¼ cup honey
  • 1 tsp. vanilla

Preheat over to 250°. In a large bowl combine scooters and nuts. In a small sauce pan, bring brown sugar, butter, and honey to a boil over medium heat. cook for five minutes, stirring constantly. Remove from heat and add the vanilla. Pour over the scooter/nut mixture until well coated. spoon onto 2 ungreased large rim baking sheets and bake for 1 hour, stirring every 15 minutes. Let cool completely, until crispy. serve or store in an air tight container until ready to serve. Bake 1.5 hours.
